We create from "sketch to plate", whether an hors d'œuvre or an entrée, all of our culinary concepts start, naturally, from sound sourcing of product — but it doesn't stop there. One eats with all of one's senses, including the eyes, so not only does sketching allow us to artfully assemble a dish visually, but also to balance it by flavor, adding & subtracting layers until the composition is perfect. These sketches help our clients envision each creation, but also act as the blueprint for our culinary staff to produce perfect plates every time.
